Tomato Salad with Berries, Red Onion, Rækling, and Mint

Instructions:

Wash the tomatoes and currants, cut the tomatoes into rough chunks, and mix with the currants. Place in a bowl and season with olive oil, a little salt, and freshly ground pepper. Peel the red onion, halve it, and slice it into thin strips. Place in a bowl with apple cider vinegar and a little salt, and give the onions a squeeze with your hands to soften them slightly and absorb the vinegar. Combine the onions and vinegar with the tomatoes and currants, mixing everything well. Pick the mint and add it to the tomato salad. Serve the salad on a platter, topped with pieces of rækling, and serve immediately.
