Greenland has ancient traditions of preserving fish without aid other than icy cold arctic wind. The semi-dried stage, where juiciness is still present, can be found as air-dried strips of Greenland halibut, called Ræklings. They are best dried over the winter when the temperature is below zero. For 15 years, Ilulissat Seafood has worked on a process that can produce this Greenlandic delicacy without being dependent on the vagaries of nature. This patented process makes it possible to adjust the moisture and the taste for the first time.

Our factories are the secret behind a perfect product.
Ilulissat Seafood launched mobile factories in 2013 in response to rising temperatures in Greenland, which affect traditional fish drying. The patented production ensures consistently high quality in the drying process, helping to adapt to climate change and maintain the high quality of the products.
Meet the founder
Jesper Løvskov has lived in Greenland for over 20 years and founded Ilussat Seafood in 2014, producing 5 tons of Ræklings annually. Married to Marie, a native Greenlandic woman, he is deeply connected to the community, contributing to the local economy and culture.
