Instructions:
Spread the rækling on a baking sheet with parchment paper, drizzle with olive oil and sea salt, and bake at 140°C for 7-8 minutes until golden and crispy. Remove from the oven and serve with horseradish mayo and freshly grated lemon zest on top.

Horseradish Mayo
Instructions:
Place the egg yolk, salt, vinegar, and mustard in a bowl and whisk together until creamy and white. Add the oil in a thin stream while whisking thoroughly until the mayonnaise is thick and creamy. Season the mayonnaise with freshly grated horseradish and freshly ground black pepper.
